- 75 g (2.6 oz) butter
- 1 egg
- 30 g (1 oz) yeast

- 120 g (4.2 oz) onions
- 300 g (10.5 oz) grated Gruyère cheese
- 5 egg yolks
- 4 tablespoons flour
- Salt
- Freshly ground pepper, to taste

- Prepare the Dough:
Combine all the ingredients for the dough. Weigh two portions of 300 g each and let them rise for 20 minutes. Roll out the dough with a rolling pin and place it in greased tart pans. Prick the base with a fork. - Preheat the Oven:
