Ingredients (for 4 servings)
- Cauliflower: 1 medium cauliflower
- Semi-skimmed milk: 200 ml of semi-skimmed milk
- Heavy cream (30% fat): 200 ml of heavy cream (30% fat)
- Comté cheese: 150 g of Comté cheese
- Butter: 50 g of butter
- Flour: 30 g of flour
- Vinegar: vinegar
- Nutmeg: a pinch of nutmeg
- Salt or fine salt
- Pepper: pepper

Preparation

- Preparation of the Cauliflower
- Separate the cauliflower into florets.
- Wash it in vinegar water.
- Boil for 20 minutes in salted water.

- Melt the butter.
- Add the flour while stirring.
- Gradually add the cold milk and cream, continuing to stir.
- Bring to a boil, stirring constantly until the mixture thickens.
- Cut the Comté cheese into small cubes.
- Add half of the cheese to the béchamel sauce.
- Place the cauliflower florets in a baking dish.
- Pour the béchamel sauce over the cauliflower.
- Add the remaining Comté cheese and the second pinch of nutmeg.
- Bake in the preheated oven at 180-210°C (350-410°F) for about 10 minutes
