- Butter 250 g of butter
- Liquid Cream 250 ml of liquid cream
- Lemon½ lemon
- Sorrel 2 small bunches of sorrel
- Shallots150 g of shallots
- Salt or Fine Salt
- Ground Pepper

Instructions:
- Chop the shallots and place them in a saucepan with the white wine. Reduce over very low heat.
- Add the liquid cream and continue to reduce over very low heat until the sauce is slightly thickened.
- Add the sorrel leaves, wait 20 seconds, remove the saucepan from the heat, and gently swirl the pan to wilt the sorrel.
- Incorporate the butter in small pieces, add a few drops of lemon juice, and season with salt and pepper.
