- 230 g of dark baking chocolate
- 175 g sugar
- 2 eggs
- 60 g of chocolate cut into pieces
- 40 g flour
- 30 g butter
- 1 tsp vanilla extract or liquid vanilla

Preheat your oven to 180°C. Melt the butter and baking chocolate using a bain-marie. While doing this (stirring constantly to prevent the chocolate from burning), whisk together the eggs, vanilla, and sugar until the mixture is slightly frothy. In a separate small bowl, combine the flour and baking powder.
Pour the melted chocolate into the egg-sugar mixture and mix well until you achieve a smooth consistency. Gradually add the dry ingredients, mixing thoroughly to eliminate any lumps. Once the flour is fully incorporated, fold in the chocolate pieces cut into small squares and mix once more.
Using a rounded tablespoon or ice cream scoop, portion out balls of dough and place them on a baking sheet lined with parchment paper, ensuring they are spaced well apart. Bake on two separate sheets. Place the brownie cookies in the oven and bake for 8-9 minutes at 180°C, or until the edges are firm. After removing them from the oven, transfer the cookies to a cooling rack to allow the moisture to escape.
