I love to take traditional recipes and make them vegan. Fortunately, there are so many incredible vegan alternatives these days, so it’s actually super easy to do. In this really simple recipe, I made a vegan bagel with vegan versions of bacon, egg and cheese.

What you will need to make the vegetable bagel of breakfast
Sandwich ingredients
- 1 bagel
- ½ lawyer
- Vegan bacon
- Vegan egg (just egg)
- Vegan cheese slices
* Note: Just Egg is an alternative to vegan egg that has the taste and cooks like an egg, but is made with beans. It comes in a bottle and can be purchased in most grocery stores. Secondary ingredients
- spinach
- mushrooms
- garlic powder
- onion powder
- olive oil
- salt and pepper to taste

How to assemble the bagel
- Toast Le Bagel.
- Cook the vegetarian bacon according to the instructions of the packaging.
- Add the vegan egg to a saucepan and cook for several minutes. Then return and cook on the other side.
- To assemble the bagel, cut the avocado and add the slices to the bagel.
- Garnish vegan egg, vegan cheese and vegetarian bacon. Close the bagel and cut it in half.
Spinach and mushroom side
- To create spinach and mushrooms, add the olive oil to a pan. Add the spinach and mushrooms. Then add the garlic powder, onion powder, salt and pepper.
- Cook the spinach and mushrooms for several minutes until the spinach spread and darken in color and the mushrooms are softened.
- Add the spinach and mushrooms to the side.
- Enjoy your breakfast!
