Ingredients
- 2 cups elbow macaroni (about 8 ounces)
- 4 tablespoons unsalted butter
- ¼ cup all-purpose flour

Method
- Cook the Macaroni:
- Preheat your oven to 350°F (175°C).
- In a large pot of salted boiling water, cook the macaroni according to package directions until al dente. Drain and set aside.
- Prepare the Cheese Sauce:
- In a large saucepan, melt the 4 tablespoons of butter over medium heat. Add the flour and whisk continuously for about 2 minutes to make a roux (it should be golden and smooth).
- Gradually pour in the milk, whisking constantly to prevent lumps. Continue to cook for about 5-7 minutes, until the sauce has thickened and coats the back of a spoon.
- Add salt, black pepper, garlic powder, and mustard powder (if using). Stir well.
- Add the Cheese:
- Reduce heat to low, then add the cheddar and mozzarella cheeses, stirring until melted and smooth.
- Remove from heat, add the cooked macaroni to the cheese sauce, and stir to coat evenly.
- Assemble and Bake:
- Pour the macaroni and cheese into a greased 9×13-inch baking dish.
- (Optional) In a small bowl, combine panko breadcrumbs with 2 tablespoons melted butter. Sprinkle this mixture over the top for a crispy crust.
- Bake for 20-25 minutes, or until the top is golden and the cheese sauce is bubbling.
