Ingredients
For the Crust:
- 1 ¼ cups all-purpose flour
- ½ cup unsalted butter, cold and cut into cubes
- ¼ tsp salt
- 3-4 tbsp ice-cold water
For the Filling:
- 1 ½ cups brown sugar (or maple syrup for a variation)
- 1 cup heavy cream
- 2 tbsp unsalted butter
- 2 tbsp cornstarch
- ½ tsp vanilla extract
- A pinch of salt
Method
- Prepare the Crust:
- In a bowl, combine flour and salt. Add the butter and mix with a pastry cutter until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, until the dough just comes together. Shape into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Roll out the chilled dough on a floured surface and fit it into a 9-inch pie dish. Trim and crimp the edges as desired. Preheat oven to 375°F (190°C).
- Prepare the Filling:
- In a saucepan, combine brown sugar, heavy cream, and butter over medium heat. Stir constantly until the mixture starts to bubble.
- In a small bowl, dissolve cornstarch in 2 tablespoons of water, then add it to the saucepan. Stir until the mixture thickens, about 3-5 minutes.
- Remove from heat and stir in vanilla extract and a pinch of salt. Let the mixture cool slightly.
- Assemble the Sugar Pie:
- Pour the filling into the prepared crust. Smooth the top with a spatula.
- Bake for 35-40 minutes, or until the filling is set and the crust is golden.
- Allow the pie to cool completely before slicing. Serve as is or with whipped cream on top.
